EQUIPMENT YOU NEED:
  • Ovenproof 8"+ sauté pan. If your sauté pan has a plastic handle, you may wrap it in 2-3 layers of aluminum foil
  • Medium 2-4 quart saucepan for reheating potatoes
  • Medium 2-4 quart saucepan with a cover for cooking spinach
  • Kitchen towel or potholder
  • Wooden spoon (or other large cooking spoon)
  • Spatula
COOKBOX INGREDIENTS

Filet Mignon, Mashed Potatoes (potatoes, milk, butter, salt, pepper), Spinach, Port Wine Sauce (Meat glace [veal bones, veal, water, carrots, onion, celery, parsley, thyme, pepper], Port wine, shallots, olive oil, salt, black pepper), Caramelized Onions (Red onions, olive oil, butter), Crushed Peppercorns.
INGREDIENTS YOU NEED:
  • 1 Tablespoon olive oil (preferably extra virgin)
  • 1/2 cup water - 1/4 for port sauce, 1/4 for spinach
  • Butter for spinach (optional)
  • Salt and pepper
